Winter Fruit Compote

Winter fruit compote, serves 12-16, recipe can be halved.

Ingredients

  • 1 pound dried plums
  • 1 pound dried apricots
  • 12 ounce can pineapple chunks packed in juice, drained
  • 2 6 ounce cans mandarin oranges
  • 12 ounce can tart cherries drained
  • 1/2 cup dried cranberries
  • 1 orange zest and juice
  • 1/3 cup sherry
  • 1/4 cup orange liqueur
  • 1/3 cup honey
  • 1 Tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 cup walnuts chopped

Instructions

    Cup of Yum
  1. Layer fruit in a casserole or baking dish.
  2. Whisk together zest, juice, sherry, liqueur, honey and spices and pour over fruit.
  3. Top with chopped nuts. Bake at 350 degrees F. for 1 hour.
  4. Serve warm.
