Ingredients
For the dressing:
- 2 to 3 tablespoons honey, warmed
- Juice of 2 large limes
- 1/4 cup orange juice
For the salad:
- 2 large apples, cored and thinly sliced (Honeycrisp or gala apples will work)
- 2 Bosc pears, cored and thinly sliced
- 3 Clementine oranges, peeled and segmented
- 3 kiwis, peeled and thinly sliced into rounds
- 1 cup pomegranate arils
- 1/2 cup chopped walnuts
- 6 to 10 fresh mint leaves, chopped (optional)
Instructions
- Make the dressing: In a large mixing bowl, combine the dressing ingredients of honey, lime juice, and orange juice, and whisk.
- Add the fruit: Add all the fruit and chopped walnuts. Sprinkle with mint, if using. Toss everything until well combined. Serve!

Notes
- To add more flavor and a little Mediterranean flare, sprinkle a couple tablespoons of unsweetened shredded coconut.
- You can also try adding 1 tablespoon of pomegranate molasses to the dressing. Pomegranate molasses is great in salad dressings; it adds a bright tangy-sweet note that is unlike anything else.
