Ingredients

  • 1 beef brisket 10-12 pounds, whole
  • brisket rub your favorite
  • aluminum foil
  • butcher paper

Instructions

  1. Preheat your smoker to the temperature of 225-250°F (107-121°C).
  2. Season the brisket generously with your favorite rub and let it sit for at least 30 minutes to allow the flavors to penetrate.
  3. Place the brisket on the smoker grates and maintain the temperature.
  4. Monitor the brisket's internal temperature with a meat thermometer.
  5. When the brisket reaches your preferred internal temperature (e.g., 160-170°F or 71-77°C), wrap it tightly with aluminum foil or butcher paper. (You can double wrap for extra security).
  6. Return the wrapped brisket to the smoker and continue cooking until it reaches an internal temperature of 195-205°F (90-96°C).
  7. Remove the brisket from the smoker, and let it rest in the wrap for at least 30 minutes before slicing and serving. Enjoy!
