Xinjiang tiger salad (老虎菜)

This Xinjiang tiger salad features sliced red onion, tomato, and green chili tossed with fresh coriander. A dressing of black rice vinegar, sugar (or honey), and salt lightly seasons the mix, producing a crisp, tangy, and slightly spicy salad. It offers a fresh vegetable side that balances heat and acidity.
