Xinjiang tiger salad (老虎菜)
Description
The salad combines thinly sliced red onion, tomato, and green chili peppers with chopped coriander to form a texturally varied mix. The dressing is a simple blend of black rice vinegar, a pinch of sugar or honey, and salt, poured over the vegetables and tossed to distribute flavor evenly.
This salad has a refreshing crispness from the raw vegetables, a mild sweetness from the sugar or honey, and a vinegar tang. The green chilies add adjustable heat depending on preference, making it suitable for a light appetizer or accompaniment.
Ingredient quantities can be adjusted to taste, allowing for milder or spicier results. It’s best served fresh to retain the vegetable crunch.
