Yayla çorbası, also known as yoğurtlu çorba, is a delicious traditional Turkish yoghurt and rice soup, that is flavored with mint.

Ingredients

  • 1 cup round rice
  • 2 cups Turkish yogurt (or Greek yogurt or labneh)
  • 3 tablespoons butter
  • 2 tablespoons dried mint
  • Red hot pepper flakes
  • salt
  • 4 cups salted water

Instructions

  1. In a large saucepan, cook the rice for about 20 minutes over low to medium heat in 4 cups (1 liter) of salted water.
  2. At the end of the cooking, do not drain the rice.
  3. Remove the pan from the heat and set aside.
  4. Beat the yogurt and add it to the rice.
  5. Adjust seasoning.
  6. When ready to serve, melt the butter in a small saucepan and add the dried mint.
  7. Mix well and pour this mixture over the entire surface of the soup served in soup plates or bowls.
  8. Sprinkle with chili flakes.
  9. Serve very hot.
