Yellow Split Pea Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 stalks celery diced
  • 2 medium carrots sliced
  • 3 cloves garlic minced
  • 6 cups vegetable broth
  • 2 cups dried yellow split peas rinsed
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions, celery, and carrots, and sauté until the vegetables are softened, about 5 minutes.
  2. Add the garlic and sauté for another minute until fragrant. Pour in the vegetable broth and add the rinsed yellow split peas, thyme, and bay leaf. Bring to a boil, then reduce heat to a simmer.
  3. Cover and let simmer for about 1 hour, or until the split peas are tender. Remove the bay leaf, stir in the lemon juice, and season with salt and pepper to taste. Serve hot.
