Ingredients
- 6 Yukon gold potatoes medium sized, washed
- 4 cups water
- 4 cups chicken broth low sodium
- 4 tbsp unsalted butter melted
- 1/4 cup whole milk warmed
- 1 large egg
- Kosher salt and freshly cracked black pepper to taste
- chopped chives for garnish
Instructions
- In a large pot, pour in chicken broth, add potatoes, and pour in enough water and chicken broth to be about an inch above the potatoes. Bring the pot to a boil over high heat, and boil for 20-30 minutes or until potatoes are fork tender. Once tender, drain the pot.
- Use a potato ricer to rice the potatoes into a large bowl, then mix in the butter and milk, stir in well. Add the egg, and stir to incorporate completely.
- Season well with salt and pepper to taste. Remember it's always easier to add than take away.
- Serve hot, garnished with chopped chives.

Notes
- Store the leftover mashed potatoes in an airtight container in the fridge for up to 3 days.
- Make Ahead and Reheating: This recipe can be made two days ahead. Make the potatoes as the recipe states but DO NOT add the egg.
- When it's time to rewarm and serve, put the mashed potatoes into a baking dish with 1/4 cup milk and a pat of butter mixed in, cover with aluminum foil, and bake at 350ºF for about 20-30 minutes, or until completely heated through. Add the egg and stir until it's fully incorporated into the hot potatoes, and serve.
