Ingredients

  • 6 Yukon gold potatoes medium sized, washed
  • 4 cups water
  • 4 cups chicken broth low sodium
  • 4 tbsp unsalted butter melted
  • 1/4 cup whole milk warmed
  • 1 large egg
  • Kosher salt and freshly cracked black pepper to taste
  • chopped chives for garnish

Instructions

    Cup of Yum
  1. In a large pot, pour in chicken broth, add potatoes, and pour in enough water and chicken broth to be about an inch above the potatoes. Bring the pot to a boil over high heat, and boil for 20-30 minutes or until potatoes are fork tender. Once tender, drain the pot.
  2. Use a potato ricer to rice the potatoes into a large bowl, then mix in the butter and milk, stir in well. Add the egg, and stir to incorporate completely.
  3. Season well with salt and pepper to taste. Remember it's always easier to add than take away.
  4. Serve hot, garnished with chopped chives.

Notes

  • Store the leftover mashed potatoes in an airtight container in the fridge for up to 3 days.
  • Make Ahead and Reheating: This recipe can be made two days ahead. Make the potatoes as the recipe states but DO NOT add the egg.
  • When it's time to rewarm and serve, put the mashed potatoes into a baking dish with 1/4 cup milk and a pat of butter mixed in, cover with aluminum foil, and bake at 350ºF for about 20-30 minutes, or until completely heated through. Add the egg and stir until it's fully incorporated into the hot potatoes, and serve.
