Zaatar
Zaatar is a Middle Eastern spice blend featuring sesame seeds, sumac, dried thyme, and salt. The sumac imparts a tart, lemon-like flavor, complemented by the nutty sesame seeds and herby thyme. This versatile seasoning can enhance meats, vegetables, and breads.
Ingredients
- 1 tablespoon sesame seeds
- 1 tablespoon sumac (see note 1)
- 1 tablespoon thyme dried
- salt to taste (see note 2)
Instructions
- In a small bowl or jar with a tight fitting lid, add sesame seeds, sumac, dried thyme, and salt to taste (I like 1 teaspoon). Store covered in the pantry for up to 6 months.
Notes
- Sumac offers a tangy, lemon-like taste; if unavailable, lemon zest works as a substitute.
- Omit salt from the blend to better control seasoning when cooking other ingredients.
- Yields about 3 tablespoons; storage in an airtight container in a dark place keeps it fresh up to 6 months.
