Zabaione

Zabaione (or zabaglione) is a light and creamy Italian custard that is made with egg yolks, sugar and dry marsala wine.

Ingredients

  • ½ cup dry Marsala
  • ¼ cup caster sugar
  • 5 egg yolks
  • 1 whole egg

Instructions

  1. Mix all the ingredients in a bowl.
  2. Place the bowl on a slightly simmering double boiler, and whisk until you obtain a homogeneous and airy foam.
  3. Work with regular but not too fast movements and speed up when the zabaione starts to get thicker. It takes about 15 minutes.
  4. Serve hot, warm, or cold, with panettone and / or biscuits and whipped cream.
