Zabaione (or zabaglione) is a light and creamy Italian custard that is made with egg yolks, sugar and dry marsala wine.

Ingredients
- ½ cup dry Marsala
- ¼ cup caster sugar
- 5 egg yolks
- 1 whole egg
Instructions
- Mix all the ingredients in a bowl.
- Place the bowl on a slightly simmering double boiler, and whisk until you obtain a homogeneous and airy foam.
- Work with regular but not too fast movements and speed up when the zabaione starts to get thicker. It takes about 15 minutes.
- Serve hot, warm, or cold, with panettone and / or biscuits and whipped cream.
