Zapiekanka

Ingredients

  • 1 thin baguette , not overcooked
  • 14 oz. button mushrooms , coarsely grated or cut into very small pieces
  • 1 onion , grated
  • 5 tablespoons butter
  • salt
  • pepper
  • chives , and/or flat-leaf parsley, finely chopped
  • 5 oz. grated cheese , mozzarella type
  • ketchup

Instructions

  1. Heat about 1 tablespoon of butter in a frying pan over medium heat, add the onion and sauté until soft.
  2. Add the mushrooms, and another tablespoon of butter.
  3. Brown, stirring several times for about 5 minutes, then season with salt and pepper.
  4. Cut the baguette in half lengthwise and then in half widthwise to obtain 4 long slices.
  5. Spread them with butter.
  6. Preheat the convection oven to 350 F (180°C).
  7. Spread each baguette with the mushroom mixture. Sprinkle with grated cheese.
  8. Place the 4 pieces of bread on a baking sheet lined with baking paper.
  9. Cook until browned, about 5 to 7 minutes.
  10. Serve with a generous splash of ketchup and sprinkle with finely chopped chives.
