A zapiekanka, also known as Polish pizza, is a long, open sandwich topped with mushrooms and cheese, served hot.

Ingredients
- 1 thin baguette , not overcooked
- 14 oz. button mushrooms , coarsely grated or cut into very small pieces
- 1 onion , grated
- 5 tablespoons butter
- salt
- pepper
- chives , and/or flat-leaf parsley, finely chopped
- 5 oz. grated cheese , mozzarella type
- ketchup

Instructions
- Heat about 1 tablespoon of butter in a frying pan over medium heat, add the onion and sauté until soft.
- Add the mushrooms, and another tablespoon of butter.
- Brown, stirring several times for about 5 minutes, then season with salt and pepper.
- Cut the baguette in half lengthwise and then in half widthwise to obtain 4 long slices.
- Spread them with butter.
- Preheat the convection oven to 350 F (180°C).
- Spread each baguette with the mushroom mixture. Sprinkle with grated cheese.
- Place the 4 pieces of bread on a baking sheet lined with baking paper.
- Cook until browned, about 5 to 7 minutes.
- Serve with a generous splash of ketchup and sprinkle with finely chopped chives.
