Zesty Lemon Vinaigrette

Ingredients

  • 4 lemons juiced
  • 1 clove garlic minced
  • ½ cup olive oil
  • 1½ tsp Dijon mustard
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp honey

Instructions

  1. Place the lemon juice, garlic, olive oil, mustard, salt, pepper and honey in a clean jar.
  2. Seal the lid and shake vigorously for a minute or two until completely emulsified.
  3. Serve immediately or refrigerate for up to a week.
