Ingredients

  • 1 1/2 pounds fresh okra, washed and air dried
  • 2 tablespoons olive oil
  • 1 1/4 teaspoons sea salt
  • 1  teaspoon ground cumin
  • 1/2 tsp ancho chile powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat the oven to 450 degrees F. Place the okra in the center of a large rimmed sheet pan and drizzle oil over the top. Add all seasoning and toss well to coat.
  2. Spread the okra out in a single layer. Roast in the oven for 18-20 minutes. Shake the pan once at the 10 minute mark to turn the okra.
