Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1 cup sugar
  • 1/2 cup milk
  • 2 large eggs beaten
  • 1/2 cup unsalted butter softened
  • 2 cups shredded raw zucchini
  • 2 cups chopped walnuts or pecans optional

  1. Preheat oven to 330°F or 165°C, and grease and flour 2 8X4 inch loaf pans.
  2. In a bowl combine the flour, salt, cinnamon, cloves, nutmeg, baking soda, and baking powder and whisk together. Set aside.
  3. In a separate bowl beat the butter and sugar until light and pale. Add the milk, eggs, and zucchini and beat to combine.
  4. If you add walnuts or pecans, stir them in at this stage.
  5. Divide the zucchini batter between the two loaf pans.
  6. Place into the oven and bake for 45-50 minutes or until an inserted toothpick comes out clean.
  7. Let the zucchini loaves cool in pans for 5 minutes then turn them onto the cooling rack completely cool.
  8. Slice and Enjoy your Zuchinini quick bread!
