Ingredients
- 3 cups flour
- 1 teaspoon salt
- 3 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground cloves
- 1 cup sugar
- 1/2 cup milk
- 2 large eggs beaten
- 1/2 cup unsalted butter softened
- 2 cups shredded raw zucchini
- 2 cups chopped walnuts or pecans optional
Instructions
- Preheat oven to 330°F or 165°C, and grease and flour 2 8X4 inch loaf pans.
- In a bowl combine the flour, salt, cinnamon, cloves, nutmeg, baking soda, and baking powder and whisk together. Set aside.
- In a separate bowl beat the butter and sugar until light and pale. Add the milk, eggs, and zucchini and beat to combine.
- If you add walnuts or pecans, stir them in at this stage.
- Divide the zucchini batter between the two loaf pans.
- Place into the oven and bake for 45-50 minutes or until an inserted toothpick comes out clean.
- Let the zucchini loaves cool in pans for 5 minutes then turn them onto the cooling rack completely cool.
- Slice and Enjoy your Zuchinini quick bread!
