Ingredients

  • 2 tbsp. olive oil
  • 4 cups chopped zucchini (about 3 medium zucchini)
  • 2 cups sliced white mushrooms (about 6 oz.)
  • 1 cup chopped yellow onion (about 1 small onion)
  • 3 garlic cloves minced
  • 1 (28 oz.) can crushed tomatoes
  • 1 (15 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 1/4 cup water
  • 2 tbsp. sugar
  • 1 tbsp. dried basil leaves
  • 2 tsp. dried oregano leaves
  • 1 1/2 tsp. salt
  • 1/2 tsp. ground black pepper

Instructions

  1. Add the olive oil to a 12 inch, high-sided skillet* and place over medium-high heat for 2 minutes. Add the zucchini, mushrooms, and onion. Cook for 10 minutes, stirring occasionally.
  2. Add the garlic. Cook one minute, stirring often.
  3. Add the crushed tomatoes, tomato sauce, tomato paste, water, sugar, basil, oregano, salt, and pepper. Stir to combine.
  4. Reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.

Notes

  • *A dutch oven or stock pot could also be used. The wider the better to keep the cooking time the same.
