Ingredients

  • 1 lb (500g) zucchini
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 pinch salt
  • ground black pepper
  • 6 cherry tomatoes cut into halves
  • grilled shrimp

Instructions

  1. Attach the zucchini to a spiralizer and spiralize it into noodles. Discard any water that seeps out from the zoodles.
  2. Mix the olive oil, lemon juice, honey, salt, and black pepper in a small bowl. Stir to combine well.
  3. Toss the zoodles with the dressing and mix well. Top with cherry tomatoes and grilled shrimp. Serve immediately.
