Zucchini Noodles (aka Zoodles)

Zucchini noodles are delicious and so much like actual pasta! This preparation method ensures non-watery, perfectly "al dente" zoodles every time.

Ingredients

  • 2-3 medium-size zucchini
  • 1/4-1/2 teaspoons salt
  • 1 Tablespoon olive oil

  1. Spiralize your zucchini using a spiralizer. Spread over a layer of paper towels and sprinkle with salt, then cover with another layer of paper towels. Allow the zucchini to sit for 20-30 minutes to draw out moisture from the noodles.
  2. Roll the zucchini noodles up in the paper towel and give them a good squeeze to remove excess water.
  3. In a large pan, heat the olive oil over medium-high heat. Add zucchini noodles and cook for 3-5 minutes, stirring occasionally, until slightly softened and al dente. Serve with your favorite marinara sauce.
