Zucchini Patties

Zucchini Patties are an easy delicious summer zucchini recipe! Pan-fried cheesy, garlicky shredded zucchini cakes with a crispy exterior.

Ingredients

  • 2 cups zucchini , grated
  • 1/2 teaspoon kosher salt
  • 1/2 yellow onion , minced
  • 2 cloves garlic , minced
  • 3 large eggs
  • 1/2 cup mozzarella cheese , shredded
  • 3/4 cup breadcrumbs
  • 1/4 cup flour
  • 1/2 cup Parmesan Cheese
  • 1/4 teaspoon coarse ground black pepper
  • 1/4 cup vegetable oil

  1. In a large bowl mix the zucchini and salt.
  2. Let sit for 20 minutes, then remove zucchini in small handfuls and squeeze well to remove as much water as possible.
  3. Add squeezed zucchini to a mixing bowl with onions, garlic, eggs, and mozzarella cheese, mixing well.
  4. In a small bowl stir together the breadcrumbs, flour, parmesan cheese, and pepper, then add it to the mixing bowl with the zucchini and stir well to combine.
  5. Add vegetable oil to a large heavy skillet on medium-high heat.
  6. Add 1/4 cup spoonfuls to the skillet and shape into an even circle.
  7. Cook for 4-5 minutes on each side until the center is cooked through.
  8. Add cooked patties to a cooling rack instead of a plate to prevent them from steaming and becoming soggy.
