Ingredients
- 5 zucchini trimmed and peeled into ribbons, small
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
- 3 tablespoons lemon juice fresh
- 1 tablespoon olive oil
- 1/2 cup Parmesan Cheese shaved
- 2 tablespoons pine nuts toasted
- 1 tablespoon mint finely chopped, fresh
Instructions
- Toss the zucchini ribbons, salt and pepper, olive oil and lemon juice together in a large bowl. Taste for seasoning. Once coated arrange them on a serving platter.
- Top the zucchini ribbons with Parmesan cheese shavings, mint and pine nuts. Serve immediately.
