  • black pepper fresh ground, to taste
  • 3 tablespoons lemon juice fresh
  • 1 tablespoon olive oil
  • 1/2 cup Parmesan Cheese shaved
  • 2 tablespoons pine nuts toasted
  • 1 tablespoon mint finely chopped, fresh

Instructions

  1. Toss the zucchini ribbons, salt and pepper, olive oil and lemon juice together in a large bowl. Taste for seasoning. Once coated arrange them on a serving platter.
