  • 3 tablespoon Biscoff spread warmed plus extra for drizzling
  • 1 teaspoon brown sugar optional
  • 4 tablespoon all-purpose flour
  • 3 tablespoon full-fat milk
  • 1 tablespoon neutral oil
  • 01/2 teaspoon baking powder
  • vanilla ice cream for topping
  • biscoff cookies for decoration

Instructions

  1. In a microwave-safe mug that holds at least 250ml (1cup) of liquid, add the all-purpose flour and baking powder. Mix with a spoon or small whisk to distribute the baking powder evenly.
  2. Warm the Biscoff spread in the microwave for a few seconds so that it mixes in easily.
  3. Then stir in the cookie spread, brown sugar, milk and oil until no flour streaks are there. Some tiny lumps are okay, avoid overmixing.
  4. Microwave for 1 minute. Insert a toothpick in the centre to check for doneness. Microwave for another 20 or 30 seconds if the centre is uncooked.
  5. Drizzle Biscoff spread on the cake while it is still warm, add a scoop of vanilla ice cream and decorate with a cookie. Serve immediately!

Notes

  • Before microwaving, put a plate under the mug to catch any spills.
  • Make sure your baking powder is fresh otherwise the cake won't rise well.
  • Microwave power differs. Start microwaving at 1 minute and give an additional 20 to 30 seconds if the cake is still undercooked.
  • Microwave mug cakes are best enjoyed fresh. In case of leftovers, you can store it covered in the fridge but the taste will not be the same.
