15 Minute Italian Garden Pasta

Keep it simple with tomatoes marinated in olive oil with fresh basil in a pasta that's served hot or cold and ready in as little as 15 minutes!

Ingredients

  • 1 pound Spaghetti
  • 2 large tomatoes diced
  • 1/2 cup chopped fresh basil
  • 2 teaspoons minced garlic  about 2 cloves
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook 1 pound spaghetti according to package directions until al dente.
  2. Meanwhile, dice 2 large tomatoes. In a large mixing bowl, combine the diced 1/2 cup chopped fresh basil, minced 2 teaspoons minced garlic, and 1/4 cup extra virgin olive oil. Stir to combine. Let sit and marinate until pasta is ready.
  3. Drain the cooked pasta and add it to the bowl with the tomato mixture. Toss to combine.
  4. Season with 1 teaspoon salt and 1/2 teaspoon black pepper, or to taste.
  5. Serve warm or cold.
