Description

This cooking method for tapioca pearls involves placing the pearls into boiling water and simmering them uncovered for 30 minutes, stirring occasionally to prevent sticking. After simmering, the pot is removed from heat and covered, allowing the pearls to rest and continue softening for an additional 30 minutes. This dual process allows the tapioca to cook fully so that the pearls become tender and chewy without turning mushy.

Once cooked, the pearls are strained and rinsed under cold running water to stop the cooking and wash off the layer of starch that could cause clumping. Taste testing is necessary to confirm whether the pearls are fully cooked; opaque centers can still indicate doneness. If the pearls are undercooked, the process can be repeated with fresh water.

Optionally, after cooking, pearls can be sweetened by mixing in sugar or honey and allowing them to sit, which prepares them for use in bubble teas, puddings, or other desserts requiring tapioca pearls.

  • ½ c tapioca pearls white
  • 10 c water

Instructions

  1. In a large pot, add 10 cups of water and bring to a boil.
  2. When it’s a rolling boil, add tapioca pearls and lower to the medium heat.
  3. Continue to simmer for 30 minutes uncovered. Stir occasionally to prevent the pearls from sticking.
  4. After 30 minutes, remove the pot from the stove, cover with lid, and let rest another 30 minutes.
  5. Strain the tapioca pearls and wash under cold running water to stop the cooking and remove the starchy outer layer.
  6. Taste-test the tapioca pearls and test if they're fully cooked through. They should be soft and chewy, but not crumble when you eat it. Note that just because the centers may be opaque, they can still be cooked fully, but you need to taste test to make sure they’re cooked.
  7. If the pearls are still not cooked throughout or have hard centers, repeat steps 2-6 with a new batch of water.
  8. Optional: when the pearls are done cooking you can choose to sweeten your pearls by adding sugar or honey on top and let sit for an additional 10 minutes.
