Caramelized Green Beans with Soy and Lemon
Description
This recipe starts by roasting trimmed green beans in a hot oven with a neutral oil to caramelize their natural sugars and develop a tender interior with some crispy edges. During roasting, the beans are stirred occasionally for even cooking and browning. Meanwhile, a sauce is prepared by mixing soy sauce, lemon juice, toasted sesame oil, and optionally chili garlic sauce for spice and tang.

Ingredients
- 1 1/2 lbs. Green bean trimmed, fresh
- 1 tablespoon neutral oil like grapeseed or canola
- 4 tablespoons soy sauce
- 2 tablespoons lemon juice about 1/2 a large lemon
- 2 teaspoons sesame oil toasted
- 1 teaspoon Chili garlic sauce optional, or sriracha
- 2 teaspoons sesame seeds toasted
Instructions
- Preheat the oven to 450F.
- Place the beans on a baking sheet and drizzle with grapeseed oil. Toss to coat and then spread into a single layer. Roast until soft and gorgeously caramelized, 12-15 minutes. Toss them once or twice so they cook evenly.
- While beans are roasting, in a large bowl, add soy sauce, lemon juice, sesame oil and chili garlic sauce (if using). Stir to combine.
- When the beans are done, add them to the sauce and toss to coat. Sprinkle with sesame seeds and serve. These are also great at room temperature.
