Aebleskivers, aka Danish Pancakes (and my Love Affair with Trader Joe's)

Aebleskivers are small, round Danish pancakes made from a batter combining egg yolks with dry ingredients like flour and baking powder, along with buttermilk and light olive oil. The beaten egg whites folded in give them a light, airy texture. Cooked in a special pan and turned with a skewer, they become evenly golden and fluffy treats. They can be enjoyed plain or with fillings such as jam or Nutella, which are placed inside the batter before fully cooking.

Description

The recipe for Aebleskivers begins by beating the egg yolks with sugar until light, then incorporating a mixture of flour, baking powder, and salt combined with buttermilk and olive oil. Separately, egg whites are beaten stiff and gently folded into the batter, giving the pancakes a delicate and airy texture once cooked. The batter is cooked in an aebleskiver pan, traditionally round with multiple shallow wells, allowing the batter to puff up into spherical cakes. Using a wooden skewer to turn them ensures even cooking and a soft, fluffy interior paired with a golden exterior.

These Danish pancakes are often served with fillings such as fruit jam or Nutella, which can be added by placing a small amount of filling on partly cooked batter in the well before topping with more batter and finishing cooking. Ingredients

  • 2 egg white
  • 2 egg yolk
  • 2 Tbsp olive oil light
  • 1 ½ Tbsp sugar
  • 1 cup flour
  • ½ tsp baking powder
  • 1 cup buttermilk
  • ¼ tsp salt

Instructions

Optional: Nutella, jam, sauces, powdered sugar for filling and/or serving.

Make the aebleskivers:

  1. In a medium mixing bowl, beat egg yolks until light in color. Add the sugar and beat in well.
  2. Stir together remaining dry ingredients in a separate bowl, then add half
  3. to the egg yolk mixture.
  4. Gently fold in half of the buttermilk, then the remaining flour and rest of the buttermilk. Mix in the oil.
  5. Beat the egg whites until stiff, then fold into the mixture.
  6. Cook as directed in the instructions for your aebleskiver pan, but do a test before filling all of the holes. I use a long wooden skewer to turn the pancakes over in the pan-it works great.
  7. You can even fill these with your choice of fillings, like apple, Nutella, chocolate, jam, etc. All you have to do is place a little batter in the pan, drop in your filling, then place more batter on top, that's it! My favorite is Nutella!

Notes

  • Filling the center with jam or Nutella adds a sweet surprise inside each aebleskiver.
  • A wooden skewer works well to turn the pancakes evenly during cooking.
