Instructions

Honey Simple Syrup

  1. In a small saucepan, combine the honey with one cup of water.
  2. Heat over medium-low, stirring occasionally, just until the honey fully dissolves. Do not bring to a boil.
  3. As soon as the honey dissolves, remove from heat and let cool completely.

Agua Fresca

  1. Wash the strawberries by placing them in a large bowl covered with 4 parts water and 1 part white or apple cider vinegar.
  2. Let them soak for 5 minutes, then drain and rinse under cold water.
  3. Remove the stems, then halve or quarter the strawberries for easier blending.
  4. Add 2 cups of cold, filtered water and the strawberries to a blender.
  5. Blend for 1-2 minutes until completely smooth.
  6. If you prefer a smoother drink, strain the agua fresca using a fine-mesh sieve into a large pitcher. This is usually not necessary, especially if using a high-powered blender.
  7. Stir in the remaining 2 cups of water, ½ cup of the simple syrup, and lime juice (if using).
  8. Taste and add more simple syrup if desired.
  9. Refrigerate for 30 minutes to 1 hour until cold. You can also serve over ice and garnish with pieces of strawberry.
