Air Fryer Butternut Squash

This Air Fryer Butternut Squash recipe features diced butternut squash tossed with fresh thyme, smoked paprika, nutmeg, salt, and olive oil, then air fried to a tender, lightly caramelized finish. The addition of honey drizzled on top adds a subtle sweetness that complements the spice and herbs. The air frying method crisps the edges while keeping the interior creamy, making it a convenient way to prepare a flavorful vegetable side dish.

Description

Air Fryer Butternut Squash combines peeled, seeded, and diced butternut squash seasoned with fresh thyme, smoked paprika, nutmeg, salt, and extra virgin olive oil. The squash is cooked at 400°F in an air fryer for about 25 minutes, shaking midway to ensure even cooking. The roasting process in the air fryer creates a tender interior with lightly crisped edges and enhances the natural sweetness of the squash. A drizzle of honey applied just after cooking adds a delicate balance to the savory spices and herbs.

The flavors in this dish develop through a blend of aromatic herbs and warm spices, with thyme providing herbal notes and smoked paprika adding depth and slight smokiness. Nutmeg contributes a subtle earthiness that complements the butternut squash. This preparation highlights the texture contrast between the crisp exterior and the soft inside.

Serve this butternut squash as a side vegetable with roasted meats or grain bowls. It can also work well as a warm salad ingredient or as a component in fall-inspired dishes. The recipe's use of the air fryer makes for a quick and less oily alternative to roasting in the oven.

Depending on your air fryer basket size, cooking in batches may be necessary for even heat circulation and proper cooking. Shake or stir the squash halfway through to avoid sticking and promote consistent browning. The honey drizzle should be added immediately after cooking while the squash is still warm to enhance the sweet-savory flavor balance.
