Description

Air Fryer Roasted Potatoes use a mix of petite Yukon Gold and red potatoes cut in half and rinsed before seasoning. Coated in olive oil, salt, pepper, and optional Cajun seasoning, the potatoes cook in a preheated air fryer at 400°F. Optional additions like smashed garlic cloves and fresh thyme sprigs infuse savory aroma during roasting. The potatoes are cooked for about 18 to 22 minutes, stirred midway, until crispy on the outside and tender inside. After cooking, a spoonful of whole grain or country Dijon mustard can be stirred in to add a nuanced flavor and texture.

The dish offers a balance between a crispy exterior and a soft interior, with herbaceous and slightly spicy notes if Cajun seasoning is used. It can be served as a side dish complementing many meals.

Ingredients

  • 1 pound Yukon Gold potato petite, or gold potato
  • 1 pound red potatoes petite
  • 1 teaspoon salt sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons Cajun seasoning optional
  • 2-3 tablespoons olive oil

Optional to add during cooking:

  • 2-3 large garlic smashed, cloves
  • 1 large thyme fresh bunch

Optional after cooking:

  • 1-2 large Dijon mustard whole grain or country style, spoonfuls

Instructions

  1. Preheat air fryer to 400°F for 10 minutes.
  2. While the air fryer preheats, cut potatoes in half lengthwise at thickest part. 
  3. Once potatoes are cut, give them a quick rinse under cool water and let drain really well in a colander.
  4. Combine potatoes, olive oil, salt, pepper, and Cajun seasoning in a large bowl; toss or stir to thoroughly coat the potatoes. 
  5. Once the air fryer has preheated, add the seasoned potatoes to the fryer basket. If using, add in the crushed garlic and sprigs of thyme. Air fry at 400°F for 10 minutes. After 10 minutes, stir the potatoes. Cook at 400°F  for an additional 8-12 minutes until potatoes are roasted, crispy and fork tender. 
  6. Remove potatoes into a large serving bowl, removing the garlic and thyme sprigs if applicable. Taste for seasoning and add more salt or pepper if desired.
  7. Optionally, once cooked you can add whole grain or country Dijon mustard to the serving bowl and give a light toss or stir.
