Antipasto Bruschetta

ANTIPASTO BRUSCHETTA is an easy appetizer you can customize to your taste and is always a crowd pleaser!

Ingredients

  • ¼ cup artichoke heart in a jar, finely diced, marinated
  • ¼ cup pepperoni mini slices
  • ¼ cup red bell pepper finely diced
  • ¼ cup yellow pepper finely diced
  • ¼ cup salami finely diced
  • ¼ cup mozzarella cheese finely diced
  • ¼ cup black olive sliced
  • ¼ cup green onion sliced
  • ¼ cup Parmesan Cheese grated fresh
  • 2 Tbs flat leaf parsley chopped
  • ¼ cup artichoke marinade from the jar
  • baguette for serving, toasted, slices

Instructions

  1. Place all diced ingredients in a medium mixing bowl and stir to combine. Drizzle artichoke marinade over all ingredients and toss again making sure all is coated with marinade. I like to let mine chill for at least an hour. Serve on toasted baguette slices. Enjoy!
