Silken Tofu with Scallions and Soy Dressing
Description
This simple dish uses silken tofu drained gently to remove excess water, creating a smooth, delicate texture. The scallion and garlic dressing is slow-cooked in neutral oil until golden and aromatic, allowing the flavors to mellow. Adding chili flakes is optional for a subtle heat.
The dressing is finished by stirring in light soy sauce, black rice vinegar, and a pinch of sugar, balancing savory, tangy, and sweet elements. Once the tofu is inverted onto a serving plate, this sauce is spooned over it, allowing the flavors to soak in while maintaining the tofu's silky texture.
Garnishing with scallions and toasted sesame seeds adds fresh and nutty notes, complementing the soft tofu. This dish can serve as a light appetizer or side in meals where gentle flavors are desired.
Ingredients
- 500 g silken tofu about 1 lb, or soft block tofu
- 1½ tablespoon neutral cooking oil
- 3 talks scallions finely chopped
- 3 cloves garlic minced
- ½ teaspoon chili flakes optional, or ground dried chili
- 2 tablespoon soy sauce light
- 1 teaspoon black rice vinegar
- 1 pinch sugar
- sesame seeds for garnishing, toasted
Instructions
- Peel off the cover of the silken tofu box. Place several layers of kitchen paper towel over then flip over. Leave to sit on a flat surface allowing the paper to absorb any excess water.
- While waiting, prepare the sauce. Add oil, scallions and garlic to a small saucepan (keep some scallions for garnishing). Leave to simmer over low heat until the aromatics become golden. Turn off the heat then stir in chilli flakes if using. Finally, add light soy sauce, black rice vinegar and sugar. Mix well.
- Flip over the tofu and carefully remove the kitchen paper. Place a serving plate upside down over the opening of the tofu box. Turn it around and gently lift up the box.
- Pour the sauce over the tofu. Garnish with scallions and toasted sesame seeds.
