Apple Bread with Streusel

Easy quick bread full of fresh apples, cinnamon and cinnamon streusel topping.

Ingredients

Bread

  • 1/2 c. butter softened
  • 1 c. sugar
  • 2 eggs
  • 1 Tbsp lemon juice
  • 2 tsp vanilla
  • 2 c. apple peeled and diced
  • 2 c. flour
  • 1 tsp baking soda
  • 1/4 tsp salt

Streusel Topping

  • 2 Tbsp brown sugar
  • 2 Tbsp flour
  • 2 Tbsp granulated sugar
  • 1 Tbsp butter
  • 1 tsp cinnamon

Instructions

  1. In a large mixing bowl beat butter, sugar and eggs until creamy. Add in lemon juice and vanilla and mix to combine.
  2. In a separate bowl mix together flour, baking soda and salt.
  3. Gradually stir flour mixture into butter mixture until just moistened. Mix in apples until combined.
  4. In a small bowl cut together topping ingredients until crumbly.
  5. Spread half of apple batter into a greased loaf pan. Sprinkle half of streusel topping over batter. Repeat layers for 2nd half of batter and ending with the rest of the topping.
  6. Bake at 350 degrees for 60 minutes. Let cool completely before slicing.

Notes

  • I think the best kind are ones that are tart and sweet like honeycrisp, Fuji, and gala apples. Granny Smith apples are always a good choice, too!
  • I don’t recommend it since it will make the bread too moist and it could collapse in the middle after it’s baked.
  • I’ve only tested this recipe with all-purpose flour. Bread flour would probably make the bread too dense and I can’t say how cake flour would work. If you try it please let me know in the comments!
  • To get the best texture you definitely want to mix the dry ingredients before adding them to the sugar, butter and eggs. Doing it this way will make it easier to mix the batter without over mixing the flour.
