  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups chopped apples about 3-4 medium apples, peeled and cored

Instructions

  1. Preheat the oven to 350°F (177°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
  3. Add the vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
  4. Fold in the chopped apples, ensuring they are evenly distributed throughout the batter.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
