Apple Cinnamon Muffins with Streusel Topping
Description
This recipe mixes all-purpose flour with pumpkin pie spice, baking soda, and salt, then combines these dry ingredients with a wet mixture of egg, buttermilk, melted butter, vanilla, and brown sugar. The batter is gently folded with coarsely chopped Granny Smith apples, which maintain their texture and tartness within the muffins. A topping of brown sugar, flour, rolled oats, cinnamon, and melted butter creates a streusel that crisps up during baking, providing a pleasant textural contrast.
The muffins are spooned to fill liners fully and baked until their tops spring back to a light touch, indicating proper doneness. These muffins pair well with breakfast or coffee breaks due to their balanced sweetness and spice. Serving fresh maintains the desirable textures and flavors.
To maintain apple bite-size, avoid cutting apples too finely. Alternatively, a substitution for the pumpkin pie spice is two teaspoons of cinnamon if the spice blend is unavailable. The recipe adapts well for home baking and offers a wholesome texture from oats and apples combined.

Notes
- Use coarsely chopped apples to preserve noticeable apple texture in the muffins.
- If pumpkin pie spice is unavailable, substitute with two teaspoons of cinnamon for similar flavor.
- Streusel topping adds a crisp texture contrast; be sure to mix butter thoroughly for even browning.
- Allow muffins to cool on a wire rack to prevent soggy bottoms before storing.
