Description

Apple Crisp Cheesecake begins with an oat-based crust made from oats, flour, brown sugar, butter, and salt, baked briefly to set. The cheesecake layer is a smooth mixture of cream cheese, sugar, eggs, and vanilla poured over the crust. Fresh peeled and sliced apples mixed with cinnamon, nutmeg, salt, and sugar are layered atop the cheesecake filling.

A streusel topping composed of brown sugar, flour, oats, chopped pecans, softened butter, and salt is sprinkled over the apples. The assembled dish is baked until set with a slight jiggle in the center.

The resulting dessert balances creamy cheesecake and tender apples with the crunchy oat and pecan topping. It works well as a comforting fall or holiday dessert.

Ingredients

  • 2 cups old fashioned oats
  • 1 cup flour
  • cup brown sugar packed
  • ¾ cup butter melted
  • ¼ tsp salt
  • 24 oz cream cheese room temperature
  • ½ teaspoon vanilla
  • cups granulated sugar
  • 3 egg room temperature
  • 3 apple peeled, cored and sliced about 1/4" thick
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar
  • nutmeg dash
  • 1 cup brown sugar packed
  • 1 cup flour
  • 1 cup old fashioned oats
  • ½ cup pecans chopped
  • ½ teaspoon salt
  • ¾ cup butter unsalted, softened

Instructions

  1. Preheat your oven to 375
  2. Combine in a large mixing bowl the 2 cups oats, 1 cup flour, 1/3 cup brown sugar, 3/4 cup melted butter and 1/4 teaspoon salt
  3. Press the mixture in the bottom of a 10" spring form pan
  4. Bake for 10 minutes then remove from oven
  5. Turn oven down to 325
  6. Make the cheesecake filling by beating the cream cheese with 2/3 cup of sugar until it is mixed well, then add the eggs (one at a time) and be sure to scrape down bowl between additions
  7. Add vanilla and mix well
  8. Pour mixture over crust
  9. Prepare apples by combing them with the cinnamon, nutmeg, salt and sugar
  10. Place apples on top of cheesecake mixture
  11. To make the streusel combine 1 cup brown sugar, 1 cup flour, 1 cup oats, pecans, butter and 1/2 teaspoon salt, then use a pastry blender or a fork to make medium sized crumbs
  12. Place crumbs over apples
  13. Bake for 80-90 minutes and test for doneness with a long toothpick. (Mine took about 80 minutes and it is OK if it jiggles slightly)
  14. Remove from oven and let cool on counter. Refrigerate until cold (6 hours or overnight)
