Apple Crumble Tartlets
Description
This recipe starts by cooking diced apples in melted butter, then simmering them briefly with brown sugar, cinnamon, and flour until thick and syrupy. Lemon juice is added to prevent browning and add brightness. Meanwhile, the crumble topping is prepared by melting butter, combining it with brown sugar, oats, and flour until crumbly.
Premade 3-inch tartlet shells are filled individually with about 1.5 tablespoons of the cooled apple filling, smoothed down, then topped with a generous teaspoon of crumbly oat mixture. Baking the tartlets at 375°F crisps the crumble topping and warms the pastry shells, resulting in a rich contrast between soft, cinnamon-sweet apple and the crunchy topping.

Ingredients
- 6 c apple 4-6 apples depending on their size, organic
- ½ c butter Divided, salted
- 1 teaspoon lemon juice
- ¾ c brown sugar Divided (regular or dark brown sugar)
- 1 teaspoon cinnamon
- 3 tablespoon all-purpose flour Divided
- 1 c rolled oats (Old fashioned or quick oats work equally well)
- 24 tartlet shells 3" size which are the most common tartlet size for premade pastry, premade
Instructions
Apple Filling
- Core and chop apples into ½" pieces. Melt 4 tablespoons (¼ c) butter over medium heat in a medium sized saucepan, toss apples to coat and let cook for 5 minutes, stirring occasionally,
- Measure ½ cup brown sugar, cinnamon and 1 tablespoon flour in a measuring cup and stir to mix. Add to apples, stir and bring to a gently boil. Let boil over medium hear for 5 more minutes stirring occasionally until thickened and syrupy.Set aside to cool to room temperature.
Crumble Topping
- In a heat proof bowl, melt butter. Add remaining ¼ cup brown sugar and stir to combine. Add in oats and remaining 2 tablespoons of flour and stir all together until well combined. This will be a crumbly texture.
Assembly and Baking Tartlets
- Preheat oven to 375' F
- Lay tart shells evenly on a large thin baking sheet. Scoop apple filling evenly into all 24 shells (approx. 1.5 tablespoons of filling in each) and gently smooth down. Top with a heaping teaspoon of crumble topping on each.
- Bake 25-30 minutes until tarts are lightly browning and pastry shells are cooked through. Remove from oven and cool on wire rack. These can be eaten warm or at room temperature. Apple crumble tartlets are delicious on their own or add a scoop of vanilla ice cream or vanilla whipped cream.
Notes
- If using unsalted butter, add ⅛ teaspoon salt separately to both the apple filling and crumble topping to enhance flavor.
- Old fashioned or quick oats may be used interchangeably for the crumble topping.
- Premade 3-inch tartlet shells save time and provide uniform portions.
- Cool the apple filling before assembling to prevent soggy tart shells.
