Apple Fritter Bread

Apple Fritter Bread combines tender, spiced apple-studded batter with a cinnamon-scented streusel topping and is finished with a sweet glaze. The batter includes diced and shredded apples, spices, and applesauce for moisture, baked into a loaf with a crunchy streusel layer that adds texture and warmth. The glaze adds a creamy sweetness to the top, making it reminiscent of the classic apple fritter pastry in bread form.

Description

This loaf features a batter made with melted butter, sugars, applesauce, eggs, vanilla, flour, baking powder, salt, and a blend of apple pie spices. Both finely shredded and diced apples are folded in, providing pockets of moist apple in each slice. The bread is baked topped with a streusel mixture of flour, brown sugar, apple pie spice, and melted butter, creating a crispy crown while the inside remains moist.

The final touch is a glaze made from powdered sugar and coffee creamer, which complements the cinnamon and apple flavors with smooth sweetness. This bread captures the taste of an apple fritter but in a convenient loaf format, suitable for breakfast, snacks, or dessert.

You can add vanilla to the glaze if using milk-based creamer for extra aroma and flavor. The bread bakes in a 9x5-inch loaf pan to yield a hearty portion.

Ingredients

Servings

For the Streusel Topping

  • ½ cup all-purpose flour
  • ½ cup light brown sugar lightly packed
  • ½ teaspoon apple pie spice homemade
  • 4 tablespoons butter melted, unsalted

For the Filling

  • 1 ½ cups apple peeled, cored, small-diced, granny smith or honeycrisp
  • 2 tablespoons granulated sugar
  • ½ teaspoon apple pie spice homemade

For the Batter

  • ¼ cup butter melted, unsalted
  • ½ cup granulated sugar
  • ½ cup light brown sugar lightly packed
  • ½ cup applesauce unsweetened
  • 2 egg
  • 1 ½ teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons apple pie spice homemade
  • ½ teaspoon salt
  • 1 cup apple peeled, cored, finely shredded, granny smith or honeycrisp

For the Glaze

  • ¾ cup powdered sugar sifted
  • 1-2 tablespoons coffee creamer vanilla or milk

Instructions

  1. Preheat oven to 350°F. Spray a 9x5x3-inch loaf pan with nonstick cooking spray; set aside.

Prepare the Streusel

  1. In a bowl, stir together the flour, brown sugar and apple pie spice. Add the butter, and combine with a fork until it resembles coarse crumbs. Set aside.

Prepare the Filling

  1. In a medium bowl, stir together the diced apples, 2 tablespoons granulated sugar and ½ teaspoon apple pie spice. Set aside.

Prepare the Batter

  1. In a large bowl, whisk together the butter and sugars until combined. Add the applesauce, eggs, and vanilla. Whisk until smooth.
  2. In a medium bowl, combine flour, baking powder, apple pie spice and salt, whisk until combined.
  3. Add the flour mixture to the wet ingredients and mix with a spatula until just incorporated. Fold in the 1 cup of finely shredded apples.
  4. Spoon half the batter into the prepared pan. Top evenly with half of the diced apples, leaving behind most of the juices that may have accumulated. Sprinkle evenly with half of the streusel crumbs.
  5. Add the remaining batter and spread into an even layer, add the remaining diced apple mixture (leaving behind the juices), followed by the remaining streusel mixture.
  6. Bake in preheated oven for 65-70 minutes. Remove pan from the oven to a wire rack and cool completely.

Prepare to Glaze

  1. In a medium bowl, stir together the powdered sugar and 1 tablespoon of vanilla creamer or milk. Gradually add more cream or milk, 1 teaspoon at a time until you reach the desired consistency. Drizzle the glaze over the cooled bread and allow to harden before serving.

Notes

  • This recipe makes one 9x5-inch loaf and serves several slices.
  • If using milk instead of coffee creamer, adding up to ½ teaspoon vanilla extract to the glaze enhances the flavor.
