Ingredients

Salad

  • ½ pound Brussels sprouts ends trimmed, very thinly sliced
  • 1 apple Fuji/Honeycrisp, chopped, sweet variety
  • 1 apple chopped, Granny Smith
  • 1 red bell pepper chopped
  • 2 cups broccoli florets
  • ¼ cup red onion
  • ½ cup toasted salted sliced pecans
  • cup feta cheese crumbled

Lemon Poppy Seed Dressing

  • cup olive oil light
  • ¼ cup granulated sugar
  • ¼ cup honey
  • cup lemon juice fresh
  • 1 teaspoon Dijon mustard
  • 1 ½ tablespoons poppy seeds
  • 1 teaspoon onion dried, minced, chopped
  • ¼ teaspoon salt

Instructions

  1. Add all of the poppy seed ingredients to a jar, cover and vigorously shake or add to a medium bowl and whisk until combined. Chill for at least one hour. May store for 1 week in the refrigerate.
  2. Add all salad ingredients to a large bowl and toss to coat. Drizzle with your desired amount of dressing.
