Apple Pie Cupcakes

Delicious Apple Pie Cupcakes with cinnamon cream cheese frosting! These are the perfect Fall treat, or any time of year.

Ingredients

Servings
  • 2 Cups flour
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp allspice
  • ½ Cup unsalted butter softened
  • 1 Cup light brown sugar
  • 2 large eggs
  • 1 1/2 cups unsweetened applesauce

Crumble Topping Ingredients :

  • 3 tbsp sugar
  • 3 tbsp light brown sugar
  • 1/2 Cup flour plus 3 tablespoons
  • 5 tbsp unsalted butter melted

Cream Cheese Frosting Ingredients:

  • 1 batch Cream Cheese frosting
  • 2 tbsp ground cinnamon
  • 1 Cup apple pie filling

Instructions

  1. Preheat the oven to 350 degrees and line a cupcake pan with cupcake liners.
  2. Using a medium sized mixing bowl, combine the flour, baking soda, baking powder, salt, cinnamon, cloves and allspice. Mix to combine and set aside.
  3. In a large mixing bowl, combine the room temperature butter and brown sugar, beat using an electric mixer until combined & creamy, about 30-60 seconds.
  4. Add in the eggs and applesauce, beat again.
  5. Gradually add in the flour mixture, mixing by hand with a spatula until it’s just incorporated. The batter will be thick.
  6. Fill each cupcake liner 3/4 full with batter. Bake for 19-21 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cupcakes to cool in the pan for 10 minutes, then move them onto a cooling rack to cool completely.

Crumble Topping:

  1. Using a small bowl, combine the sugar, brown sugar, and flour until combined.
  2. Mix in the melted butter until combined and clumping together.

Cinnamon Cream Cheese Frosting:

  1. Make the cream cheese frosting and add the cinnamon.
  2. Scoop frosting into piping bag.
  3. Frost cooled cupcakes around the edge, leaving the center open.
  4. Spoon about 1 tablespoon of the apple pie filling into the center of the cupcakes.
  5. Sprinkle some of the crumble onto the frosting. Enjoy!
