Austrian Liptauer Cheese Recipe
Description
The Liptauer Cheese recipe combines soft butter with fresh, preferably full-fat cottage cheese to create a smooth base. Finely chopped onion and garlic add pungency, while Dijon mustard provides subtle tanginess. The key spices include paprika, available as sweet or smoked, and caraway seeds, which impart a distinct, slightly anise-like aroma that defines the spread. Salt and pepper balance the flavors.
This cheese spread is typically served cold and works well as part of a snack platter or appetizer with bread or crackers. The garnishes such as diced bell peppers, chopped pickles, capers, or radish slices give a fresh and crunchy contrast to the creamy and flavorful cheese.
For best texture and flavor, choose a full-fat cottage cheese and strain any excess liquid. Alternatives like quark or mascarpone can be used but may differ slightly in taste and texture. Authentic versions use specific regional cheeses such as Slovakian bryndza, which can be hard to source, so substitutions are common.
Ingredients
Liptauer Cheese
- ½ cup cottage cheese See Notes, fresh
- 2 Tablespoons butter soft
- 1 Tablespoon onion chopped
- 1 garlic chopped, clove
- 1 Teaspoon Dijon mustard secret ingredient
- 1 ½ Teaspoon paprika sweet variety or smoked, powder
- ¼ Teaspoon caraway seeds it's a main ingredient!, whole
- ¼ Teaspoon salt
- black pepper pinch, ground
Garnish Ideas
- bell pepper sliced or diced small
- pickles chopped
- capers
- radish slices, pink
Instructions
- Grab a bowl and add the soft butter together with the quark and mix well. See that no bits are left, and the mixture is smooth. I like to use a fork for that.
- Chop garlic and onion fine, add them to the quark/butter mix.
- Toss in the Dijon mustard, paprika powder, caraway seeds, salt, and ground pepper.
- Garnish with chopped bell pepper or pickled cucumbers or capers or pink radish slices.
Notes
- Use 20% fat full-fat cottage cheese or strain lower-fat versions to improve creaminess and flavor concentration.
- Traditional Austrian and German versions use Topfen or Quark, which are similar to cottage cheese but often creamier.
- Substitute mascarpone or plain cream cheese if cottage cheese is unavailable, keeping in mind flavor differences.
- Authentic Slovakian bryndza sheep cheese adds a unique flavor but is uncommon outside Eastern Europe.
