Description
Linzer Cookies begin with creaming unsalted butter and sugar until light, then incorporating egg yolk, vanilla, lemon juice, and zest for brightness. Almond flour combined with all-purpose flour and salt is folded in to yield a soft dough. The dough is chilled, then rolled and cut into 3-inch scalloped circles for the cookie bases and smaller star shapes to make windows in the top cookies.
After an 8 to 10 minute bake at 350°F, cookies are cooled and raspberry jam is gently warmed and reduced to intensify flavor. Jam is spread onto the bottom cookies, topped with powdered sugar-sifted star-cutout cookies, and pressed gently to sandwich the jam. These cookies have a tender, buttery texture with a balance of tartness from the raspberry jam and lemon notes in the dough.
They are suitable for gifting or serving as a refined tea-time treat.
Ingredients
- 3/4 cup butter unsalted
- 1/2 cup sugar
- 1 lemon , zested and juiced
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1 cup flour
- 3/4 cup almond flour
- 1/4 teaspoon salt
- 1 cup raspberry jam
- 1/2 cup powdered sugar
Instructions
- To a stand mixer add the butter and sugar and beat until light and fluffy before adding in the eggs, vanilla, lemon and lemon zest.
- Add in the flour, almond flour and salt on low speed until just combined.
- Gather the dough into a ball then roll to 1/4" thick, using a scalloped 3" cookie cutter to cut out 12 cookies then stamp out 12 stars and gather all the scraps and re-roll using a bit of extra flour if the dough gets a bit sticky.
- Stamp out 12 more cookies then chill all the cutouts for at least an hour before baking in a 350 degree oven for 8-10 minutes.
- Before assembling let your cookies cool completely, simmer your raspberry jam on low heat for 5-7 minutes until reduced by one-third then spread a spoonful onto the cookies without the cutout.
- Sift powdered sugar onto the cookies with the star cutouts then carefully place them onto the cookies with the raspberry jam and press down carefully to spread the jam fully carefully.
