  • 500 grams cavatelli
  • 3 cups broccoli divided into small florets
  • 1.5 .5 cups chicken broth
  • 3 cloves garlic minced
  • 4 tablespoons extra virgin olive oil
  • .5 .5 cup Pecorino Romano cheese freshly grated
  • 0.5 .5 tsp red pepper flakes
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. In a saucepan, heat the extra virgin olive oil over a moderate heat.
  2. Once the oil is hot enough, immediately add the minced garlic. Cook and stir until pale golden.
  3. Then, add the broccoli, red pepper flakes, salt, and pepper. Stir for 2 to 3 minutes.
  4. Add the chicken broth and simmer for 5 to 6 minutes or until broccoli florets are cooked. Set aside.
  5. In a pasta pot, boil salted water and cook the cavatelli. If you're cooking fresh pasta, they should be done in 5 to 8 minutes, depending on the size of the pasta. If you're using dried cavatelli, they may take up to 15 minutes to cook.
  6. Drain pasta and add them to the saucepan. Toss with the sauce and add grated Pecorino Romano cheese.
  7. Cook over low heat for about a minute.
  8. Sprinkle more grated Pecorino Romano cheese on top before serving.

  • Best paired with a glass of Pinot Grigio or Sauvignon Blanc.
