Bacon Pumpkin Bread
Description
This recipe utilizes diced bacon that is fried until cooked and integrated into a pumpkin bread batter containing plain flour, bicarbonate of soda, cinnamon, allspice, salt, caster sugar, eggs, pumpkin puree, olive oil, and water. The dry ingredients are mixed separately before combining with wet components and stirred together to incorporate the bacon and pumpkin seeds. The batter is poured into a greased loaf tin and topped with more pumpkin seeds.
Baking at 350°F for 60 to 70 minutes yields a loaf with a golden crust and moist interior. The pumpkin puree imparts moisture and subtle sweetness, while the bacon contributes a savory, smoky flavor complementing the warm spices. This bread can be served sliced for breakfast, snacks, or as part of a savory spread.
