Ingredients

  • 1 pound green beans preferably french green beans or thinner green beans will work
  • 10 slices Bacon do not use thick cut
  • 1 teaspoon garlic salt
  • ¼ cup butter melted
  • 2 Tablespoon brown sugar
  • ½ teaspoon pepper
  • 1 Tablespoon chopped parsley optional

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Line a large baking sheet with sides with aluminum foil. Place the bacon on the sheet pan and bake for about 10 minutes. The bacon will not be cooked.
  3. Trim the ends of the green beans.
  4. Bring a large pot of water to a boil. Place the green beans in the pot and cook for 2-3 minutes or until just tender.
  5. Drain green beans in place in a bowl of ice water to stop the cooking process.
  6. Pat the green beans dry.
  7. In a small bowl mix together the garlic salt, butter, brown sugar and pepper. Pour mixture over the green beans and toss to coat.
  8. Take 8-10 green beans and place on one end of a slice of bacon. Roll the green beans up with the bacon. Place seam side down on a sheet pan lined with aluminum foil or sprayed with non-stick spray.
  9. Bake in a preheated oven at 400 degrees F for 15-20 minutes or until bacon is crispy.
  10. Sprinkle with parsley if desired and serve immediately.

Notes

  • Do you have to soak green beans before cooking?No, you don’t have to soak them. Cooking them for a few minutes in boiling water before you bake them is enough to soften them so they’re not chewy.
  • Why are my beans still hard?It’s important to use fresh ones for this recipe. If they are old and dried out they will not be as soft and tender when they are cooked. Fresh green beans will snap when you break them in half – they shouldn’t be limp.
  • Should green beans be soft or chewy?For this recipe, they should be soft when they are done cooking. If they are chewy they are probably undercooked.
