Baja Shrimp Tacos

Delicious, homemade Baja Shrimp Tacos are stuffed with seasoned shrimp, sauce, coleslaw plus your favorite toppings!

Ingredients
Baja Shrimp
- 1 pound large shrimp cooked, deveined, tails-off thawed and patted dry
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon garlic powder
- ½ teaspoon chipotle powder
- 1 Tablespoon olive oil or any cooking oil
Chipotle Sauce
- ¼ cup sour cream
- ¼ cup mayonnaise
- 2 teaspoons adobo chipotle sauce
- 1 Tablespoon fresh lime juice
Mexican Coleslaw
- 2 cups coleslaw mixture
- 2 Tablespoons mayonnaise
- 2 Tablespoons lime juice
- 2 teaspoons chopped cilantro
Toppings
- shredded cheese
- Diced tomatoes or Pico de gallo
- Diced avocados
- 8 flour tortillas
Instructions
Season The Shrimp
- Prepare the shrimp and pat them dry.
- Mix the chili powder, cumin, salt, pepper, garlic powder and chipotle powder together in a large mixing bowl.
- Add the shrimp in and mix to coat evenly and set aside.
Make The Sauce
- Mix all the sauce ingredients together and set aside.
Mix The Slaw
- Mix all the slaw ingredients together and set aside.
Cook The Shrimp
- Heat the olive oil in a skillet over medium heat.
- Cook the shrimp in the oil for about 5-7 minutes, or until the seasoning coating begins to brown and the shrimp are evenly warm.
Make Baja Shrimp Tacos
- While the shrimp are cooking, heat the tortillas on a separate burner.
- Layer each tortilla with the slaw mixture, Baja shrimp, shredded cheese, some of the sauce, tomatoes, and avocados.
Notes
- For best results, store leftover taco ingredients separately. I recommend allowing the shrimp to fully cool and then transferring to an airtight container. Store the sauce and slaw in separate containers.
- FRIDGE: Store all ingredients for up to 3 days in the fridge. The sauce will likely last a little bit longer.
- FREEZER: You can freeze leftovers shrimp and tortillas, but I do not recommend freezing slaw or sauce.
- I do not recommend reheating shrimp in the microwave — it makes them really rubbery. For best results, reheat in a skillet on the stove top or in the air fryer. Reheat until warmed through!
