This baked caprese chicken comes together in one pan with simple ingredients. It's juicy, flavorful and the perfect 30-minute meal to make on busy weeknights!

Ingredients
- 1 ½ lb boneless skinless chicken breasts 3-4 breasts
- 1 teaspoon sea salt divided
- 1 teaspoon black pepper divided
- 1 Tablespoon olive oil
- 16 oz (1 pint) cherry tomatoes
- 8 oz ball fresh mozzarella sliced into 8 slices
- ½ teaspoon garlic powder or 2 garlic cloves, minced
- 1 teaspoon oregano
- Fresh ripe roma tomato sliced, for topping
- balsamic glaze for serving
- fresh basil leaves for serving
Instructions
- Preheat oven to 400°F.
- Pat chicken breasts dry and season with ½ tsp salt and ½ tsp pepper.
- Add olive oil to a 9x13 baking dish with tomatoes, garlic powder (or fresh garlic), oregano and remaining salt and pepper. Toss to coat. Add chicken breasts to baking dish nestled into tomatoes.
- Bake for 20 minutes then remove from the oven and top chicken with mozzarella slices and fresh tomato slices (if using).
- Bake for an additional 5-10 min until the internal temperature of chicken is 165°F and mozzarella has melted. Broil for the last 2-3 minutes, if desired.
- Remove from oven and drizzle with balsamic glaze and sprinkle on fresh basil leaves. Serve with sautéed spinach, rice, pasta or sourdough.
