  • 11 ounces corn drained if you use canned (I used frozen
  • 7 ounce Greek yogurt plain
  • 1 green chiles chopped, mild, 4.5 oz can
  • 1 chipotle pepper seeds removed and chopped, whole, in adobo sauce
  • 1 teaspoon adobo sauce
  • 1 cup Monterey jack cheese shredded
  • 2 cups cheddar cheese shredded
  • 1/2 teaspoon garlic powder
  • black pepper to taste, ground
  • 1 tomato chopped, small
  • 2 green onions sliced
  • 2 Tablespoons cilantro chopped

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a baking dish with non-stick cooking spray.
  2. In a large bowl combine yogurt, chiles, chipotle pepper, adobo sauce, cheeses, garlic powder and pepper. Mix well and fold in corn. Pour into prepared baking dish and spread evenly.
  3. Bake for 20-25 minutes or until hot and bubbly.
  4. Top with tomatoes, green onions, and cilantro.
  5. Serve immediately.
