Baked Lemon Chicken

One-pan Baked Lemon Chicken is so easy you'll want to make it over and over again! Just place simple ingredients in a baking dish and dinner is done!

  • 6 bone-in chicken thighs skin on
  • 1 pound mini red potatoes washed
  • ½ yellow onion sliced
  • 2 lemons 1 sliced and 1 juiced
  • cup olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme plus sprigs for garnish
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Preheat oven to 400 degrees F. Spray a 9-inch x 13-inch baking dish with non-stick cooking spray.
  2. Arrange chicken pieces (skin side up), potatoes, sliced onion, and lemon slices to fit in the pan.
  3. In a small bowl, mix together lemon juice, olive oil, garlic, thyme, crushed red pepper, and salt and pepper. Pour mixture all over chicken, potatoes, lemons and onions coating all ingredients evenly.
  4. Bake uncovered for about 1 hour, or until potatoes are completely cooked and chicken has an internal temperature of 165 degrees F. Remove from oven. Serve warm with pan juices.

Notes

  • If you prefer, you can use a whole chicken that's been broken down instead of only chicken thighs.
